Non-destructive methods (NDM) as a means of assessing the newlinequality in agricultural produce have been recognized and has gained a newlinevalue in food industries. Currently, NDMs are useful because they permit newlinethe simultaneous measurement of physical and chemical information of newlinefood substances without destruction. Near infrared spectroscopy newlinetechniques are being assimilated as one of the leading technologies in newlineagricultural industries for both the qualitative and quantitative analysis newlineBoth the quantitative and qualitative analysis of food substances are newlineobtained from the acquired spectral data. This research work focuses on newlinethe quality analysis of honey by identification and prediction of various newlinekey components using appropriate prediction algorithms. newlineBeekeeping is done both at commercial level and small-scale newlinelevel. The production of honey in India has seen a drastic increase in the newlinelast few years. Honey is considered as an exquisite source of nutrients and newlineenergy containing carbohydrates, water, small quantity of vitamins, newlineenzymes, minerals and some organic acids. According to the National newlineBeekeeping and Honey Mission (Ministry of Agriculture and Farmers newlineWelfare February 2021), India produced 76,150 metric tonnes of honey newlinein the year 2013-14 and it was increased to 1,20,000 metric tonnes during newline2019-20. Moreover, 59536.74 metric tonnes of honey was exported by newlineIndia during the year 2019-20. Honey has been proficiently used in the newlinemedical field to aid the cure for various diseases related to skin, heart, newlinecancer, neurology. It has acquired a vital role as an esteemed and newlinetherapeutic agent by medical practitioners in conventional medicine. newlinevii newlineIn recent times, the consumers pay more attention to food safety newlineand quality, which are appreciably related to human health. Adulteration newlinein food substances is a global issue relating to food quality and it is newlinechallenging to detect. Modern detection method includes high newlineperformance liquid chromatography, gas chromatography which can newlineaccurately detect the types and concentrations
