dc.description.abstractThe purpose of this investigation was to develop a low glycaemic index browntop newlinemillet based ready-to-drink mix with insulin plant leaf powder acknowledging the newlinesignificance of low glycaemic index foods in the management of diabetes and other lifestyle newlinedisorders. The physical, functional, thermal and pasting properties of browntop millet newlinerevealed that the bulk density and tapped density were 0.26 and 0.54 g/ml respectively. The newlineflowability, cohesiveness, dispersibility, water absorption capacity, oil absorption capacity, newlineswelling power and solubility were 52.18 per cent, 2.09, 77.31 per cent, 75.48 ml/100g, 71.44 newlineml/100g, 7.07 g/g and 12.28 per cent respectively. The final gelatinization temperature, newlinegelatinization time, hot paste viscosity, cold paste viscosity, per cent sag and paste clarity newlinewere 77.97, 608 seconds, 6.98 cP, 8.95 cP, 11.82 per cent and 29.93 per cent respectively. newlineNutritional analysis showed that the moisture, protein, fat, ash, crude fibre and carbohydrates newlineof browntop millet were 8.69, 13.37, 4.23, 5.48, 4.92 and 63.32 per cent respectively. Total newlinestarch, resistant starch, total dietary fibre and total sugars were 56.43, 1.20, 12.43 and 0.97 newlineg/100g respectively. The predicted glycaemic index and predicted glycaemic load were 48.15 newlineand 6.04 respectively. Total phenols, total flavonoids, tannins, phytates and oxalates were newline166.96 mgGAE, 2185.82 mgQE, 2.12 g, 368.33 mg and 4.12 mg/100g respectively. Calcium, newlineiron, zinc, copper and manganese were 26.24, 6.98, 2.88, 1.43 and 0.88 mg/100g respectively. newlineNutritional analysis of insulin plant leaf powder revealed that the moisture, protein, fat, ash, newlinecrude fibre and carbohydrates were 4.80, 10.67, 1.95, 3.48, 18.27 and 60.83 per cent newlinerespectively. Total starch, resistant starch, total dietary fibre and total sugars were 27.11, 5.58, newline22.17 and 3.86 g/100g respectively. The predicted glycaemic index and predicted glycaemic newlineload of insulin plant leaf powder were 37.81 and 5.35 respectively. Total phenols, total newlineflavonoids, tannins, phytates and oxalates
